  • 3 pieces tomatoes diced
  • 2 pieces red bell peppers diced
  • 1/2 piece red onion finely chopped
  • 2 cloves garlic minced
  • 1/2 cup parsley fresh and chopped
  • 1 tbsp tomatoe paste
  • 1 tbsp red pepper paste optional
  • 3 tbsp olive oil extra virgin
  • 1 lemon juiced
  • 1 teaspoon salt
  • 1 teaspoon cumin ground
  • 1 teaspoon paprika
  • 2 tbsp pomgranate sauce optional

Instructions
 

  • In a large bowl, combine the diced tomatoes, diced red bell peppers, finely chopped red onion, minced garlic, and chopped parsley.

  • In a small bowl, whisk together the tomato paste, red pepper paste (if using), olive oil, lemon juice, salt, cumin, and paprika
    1 tbsp tomatoe paste, 1 tbsp red pepper paste, 3 tbsp olive oil, 1 lemon, 1 teaspoon cumin, 1 teaspoon paprika, 1 teaspoon salt
  • Toss fluff and melt all
  • Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  • Add 3 tbsp of pomgranate sauce
    2 tbsp pomgranate sauce
  • Add finally extra olive oil for shine and taste.
  • Rest for 30 minutes before serving at room temperature.

Notes

NOTES
  • If you are in a hurry this spicy red pepper salad can be made within 10 minutes as well. 
But if you have time I recommend to keep it in the fridge  for 1 hour and then resting for 30 minutes at room temperature before serving. 
  • Try to avoid using a food processor for this recipe since the tomatoes and the mixture would get too juicy. 
  • Just nefore serving you may add more salt and paprika according to your preference. 
  • If there is any, you may keep the leftover in the fridge for 2 days and reserve after making it rest until it gets at room temperature.
