- Choose the right type of eggplant. Different eggplant recipes require different eggplant types.

- Baby Eggplant type (also called Indian eggplant) are extremely delicious.

Since they are sweeter, they are the perfect choice for Italian cuisine’s specialties rather than stir fries recipes.
- Don’t forget to peel them off before cooking steps if not a skinned cooked eggplant can be a nightmare.
- Don’t use too much olive oil. Eggplants absorb oil so quickly and if you add more oil then necessary, the result can not be satisfying.
- Don’t skip the pre-salting process. It’s crucial. Before cooking let them rest in water (at room temperature) with salt and all your spices for at leat 20 minutes.
- Be sure they are not wet before the cooking.
Eggplant Recipe With Ground Beef (Moussaka) Recipe Ingredients
1 kg of eggplant
4 tomatoes ( 1 to be used on top of the dish )
15 adet chili pepper (2 of them for the ornement)
3 pieces of onions
3 cloves of garlic
1 bunch of parsley
1 table spoon of butter
350 gr ground beef
1/2 table spoon of tomato paste
3 cups of hot water
1 tea spoon of cumin
2 tea spoon of red chili pepper
1 tea spoon of black pepper
1 dessert spoon of salt
1 liter of refined sunflower oil
Eggplant Recipe Cooking Steps
STEP 1 Peeling Off The Eggplants
Peel them off in “zebra style” and cut their heads.
Chop the eggplants and make them rest in salted cold water for 15 minutes.
STEP 2 Preparation of The Sauce Ingredients
Peel off the tomatoes.
Chop the 3 of tomatoes into small cubes.
Chop the last tomatoe in rings.
Chop the 2 of green chili peppers. (to place on top in later.)
Chop the rest in small pieces for the sauce.
Chop the onions thinly.
Chop the garlics and pasley very thinly.
STEP 3 Drainage and Cooking the Eggplants
Wash the salted and rested eggplants; drain and dry them with help of kitchen paper towel.
STEP 4 Frying The Eggplants
Pour 1 liter of sunflower oil in the pan and heat it for 2 minutes.
Add eggplants within the oil.
When the eggplants turn into golden brown color, take them off the heat.
Place them on a plate with paper towel.
This step would take the excessive oil and the towel would absorb it.
Make them rest.

STEP 5 Preparation of The Sauce
Add 1 table spoon of butter in a pan.
Add 350 gr. of ground beef.
Cook the butter and grıound beef with help of a whisk for 5 minutes.
Add onions.
Cook them together for 10 more minutes.
Add garlics and cook for 3 minutes.
Add chopped green peppers.
Cook for 2 more minutes.
Add tomatoe paste and chopped tomatoes.
Cook them 3 more minutes.
Minimize the heat to minimum.
Add 3 cup of hot water and blend them all.
Add cumin, red pepper, black pepper and salt.
Close the lid and cook for 10 minutes.
Turn off the heat and make the sauce rest.
Add parsley on top of the sauce.
Add the sauce on cooked eggplants.
Add tomatoe and green peppers on top.
STEP 6 Oven Process
Put the eggplants in preheated oven for 180 degress.
Cook them all for 30 minutes.
Make it rest for 5 minutes.

- 2 sauce pans
Ingredients
- 1 kg eggplant
- 4 pieces tomatoes
- 3 pieces onions
- 3 cloves garlic
- 1 bunch parsley
- 1 tbsp butter
- 350 gr ground beef
- 1/2 tbsp tomatoe paste
- 3 cups hot water
- 1 tea spoon cumin
- 2 tea spoon ground red pepper
- 1 tea spoon black pepper
- 1 dessert spoon salt
- 1 liter refined sunflower oil
Instructions
- Peel them off, presalt and rest them in cold water.1 kg eggplant
- Chop the onions, garlics, tomatoes and peppers4 pieces tomatoes, 3 pieces onions, 3 cloves garlic, 1 bunch parsley, 1 tbsp butter, 350 gr ground beef, 1/2 tbsp tomatoe paste, 3 cups hot water, 1 tea spoon cumin, 2 tea spoon ground red pepper, 1 tea spoon black pepper, 1 dessert spoon salt
- Put eggplants in a pan with refined sunflower oil and fry them until they get golden brown color. Take them off the heat and make them rest on papaer towel to make them absorb the excessive oil.1 kg eggplant
- Put ground beef, chopped onions, tomatoes, tomatoe paste, garlics, spices with 1 table spoon of butter and cook them for 30 minutes.
- Place fried eggplants and sauce in preheated oven (180 C) for 30 minutes.
