Turkish coffee has become a true classic in Turkey and is one of the most important components of Turkish eating and drinking culture.

It is a type of coffee made by brewing and cooking slowly in boiling water, which is ground very finely.

While pouring into the coffee cups after cooking, the coffee grounds are not filtered and poured into the cups slowly with the coffee.

The expression Turkish coffee does not mean that the coffee is always grown in Turkey.

During the Ottoman Empire, in today’s Istanbul, before the emergence of coffeehouse-style spaces, a select group of people who had access to coffee began to consume this special beverage called coffee, which was appetitive and stimulating to the mind, in their private properties.

From the descriptions of the historical documents of the period, we can deduce that what we are talking about is coffee as we know it today.

Turkish coffee beans were brought from Yemen to Istanbul in sacks via ships and cooked in vats. 

 

Although Katip Çelebi mentions a ship loaded with coffee sacks that docked in Tophane, Istanbul in 1543 in his written works, it is thought that coffee entered Istanbul before this date.

Professor of History at Harvard University Cemal Kafadar states that one of the earliest written sources mentioning the existence of coffee in Istanbul is a donation document belonging to Barbaros Hayreddin Pasha. 

There is also a Turkish coffee drinking room in Barbaros Hayreddin Pasha’s house, which is one of the properties affiliated to the family foundation registered in 1539.

Although the Turkish coffee preparation seems simple, there are some key points in obtaining a proper coffee.

1. If possible, make it by hand instead of a Turkish coffee preparation machine: Those who will make Turkish coffee for the first time may prefer to buy a Turkish coffee machine from time to time.

In this case, after making the settings of the machine, it remains to cook the coffee with a single button.

On the other hand, to be frank, I think that the Turkish coffee preparation machine cannot fully provide the aroma, texture and taste of hand-made Turkish coffee.

2. Pay attention to the freshness of the Turkish coffee beans: If the coffee is stale, you cannot achieve that classic impressive aroma no matter how hard you try.

If you are not going to consume Turkish coffee very often, buy it frequently and in quantities that will run out easily to avoid the risk of staleness.

3. Use a quality copper coffee pot: A coffee pot is your biggest assistant in the process of Turkish coffee preparation

In Turkey it’s called “bakır cezve.”

However, in order to keep the consistency of Turkish coffee, it is useful to choose a copper coffee pot, not aluminum coffee pots.

4. Making Turkish coffee slowly and at the lowest temperature:

If you try to prepare Turkish coffee at high temperature to save time, your coffee will have insufficient flavor and foam.

Make sure that the smell, taste, consistency and foam of the coffee you will get will collect all the compliments when you cook it patiently, stirring constantly with a small spoon at the lowest temperature of your stove.

 

5. Choose To Add Cold Water Instead of Hot Water: If you pour hot water within the coffee pot the Turkish coffee beans would easily get “cooked” without aroma.

Here is the step-by-step instructions for the best Turkish coffee making experience:

  1. Put 2 tea spoon of ground Turkish coffee per serving into the copper pot.
  2. Calculate and add the sugar such as: For low sugared Turkish coffee 1 full tea spoon of sugar per serving

For medium sugered Turkish coffee add 1+5 tea spoon of sugar per serving,

For highly sugered Turkish coffee add 2 tea spoon of sugar per serving into the pot.

 

3. Add cold water into the pot (use the same coffee cup) 1 cup of cold water per serving

 

4. Do not blend them before the coffee gets heated.

If not you would kill the foam before it appears.

 

5. Choose the lowest heat and start blending the coffee, water and sugar with slow circular motions on heat.

 

6.Never stop blending until you see the first boiling signal. (Patience needed:)

 

7.When you see the foam and boiling signal take the appeared foam off the pot and put the foam into the Turkish coffee cups with help of

tea spoon.

 

8.Continue stirring on lowest heat and when the coffee got completely boiled add the coffee within the coffee cups.

  1. The coffee beans sould be fresh enough.
  2. The water that you add into the coffee pot should be cold.
  3. It’s more difficult to obtain the foam when you make a totally sugerless Turkish coffee.
  4. The heat should be minimum.
  5. You should continiously blend and stir the coffe water and sugar with slow motions.

 

If you stir too quickly you would kill the foam before it appears.

 

6.You should remove the foam quickly off the pot with help of a small spoon and pour it into the coffee cups when you see the first boiling signal.

If you miss it, the appeared foam would get disappeared.

I always use and advise you to use a vacuum container to keep the freshness of the coffee beans.

 

Another good way of keeping them fresh is to buy them in one usage packaging forms so that you open the package only once before the preparation process.

Equipment

  • 1 pot cupper
  • 1 tea spoon

Ingredients
  

  • 3 tea spoon ground Turkish coffee
  • 2 coffee cups water cold
  • 2 tea spoon sugar

Instructions
 

  • Add water, ground coffee and sugar within the cupper pot.
  • Place the pot on stove and start boiling the coffee on the lowest heat.
  • Continiously blend the ingredients with help of a small tea spoon.
  • When the coffee starts boiling take the foam off the coffee using the spoon and put the foam within the coffee cups.
  • Continue boiling the coffee for 1 more minute and then pour the rest within the coffee cups.

Notes

1.Use cold water when making Turkish coffee.
2.Prefer a cupper pot for better coffee taste and texture. 
3.Always prefer the lowest heat for making Turkish coffee if not your coffee foam would be lost and the taste wouldn't be the same. 
4. Turkish coffee is strong. Prefer not more than 2 cups in a day and serve it always with some water or liqueurs.
