Easy Creamy Tomatoe Soup Recipe

So savory and filling...Perfect start for a good dinner. Creamy, refreshing Turkish style tomatoe soup is an ideal option for tomatoe lovers. Yummy yummy yummy.

Ingredients
  

  • 2 pounds ripe tomatoes
  • 1 tbsp olive oil extra virgin
  • 1 piece onion chopped
  • 3 cloves garlic minced
  • 1 piece carrot grated (optional)
  • 2 cups vegetable broth or chicken broth
  • 1 teaspoon sugar or honey
  • 1/2 cup heavy cream or whole milk
  • 1 teaspoon dried basil (or 2 tablespoons fresh basil, chopped)
  • 1/2 teaspoon thyme dried
  • 1 dessertspoon salt The salt amount may vary acoording to your consumption habits.

  • 1 tbsp grilled cheese optional

Instructions
 

  • Preheat your oven to 400°F (200°C).
    Start by preparing the tomatoes.
    Cut them into halves or quarters and place them on a baking sheet.
     
    Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat.
    Roast the tomatoes in the preheated oven for about 25-30 minutes or until they become soft and slightly caramelized.

  • In a large pot, heat the olive oil over medium heat.
    Add the chopped onion and minced garlic, and sauté until the onion becomes translucent and fragrant, usually around 5 minutes.

  • If using, add the grated carrot to the pot and sauté for an additional 2 minutes.
    The carrot adds a touch of sweetness and helps balance the acidity of the tomatoes.

  • Add the roasted tomatoes to the pot, along with any juices accumulated on the baking sheet.
    Stir everything together and cook for about 2-3 minutes to allow the flavors to meld.
  • Pour in the vegetable or chicken broth, ensuring that the tomatoes are fully submerged.
    Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes.
    This allows the flavors to further develop.

  • After simmering, use an immersion blender or transfer the mixture to a blender or food processor to puree until smooth.
    Be cautious when blending hot liquids and work in batches if necessary.
  • Return the pureed soup to the pot if you used a blender or food processor.
    Stir in the sugar or honey, dried basil, dried thyme, and season with salt and pepper to taste.
    Simmer for an additional 5 minutes to allow the flavors to meld.

  • Taste the soup and adjust the seasonings if needed.
    If the soup is too thick for your liking, you can add a bit more broth or cream to achieve the desired consistency.
  • Once ready, ladle the creamy tomato soup into bowls. Garnish with fresh basil leaves, croutons, and a drizzle of olive oil if desired.

Be sure to take care of these tiny details to obtain the best creamy tomatoe soup: 
1. Always use ripe, flavorful tomatoes: The quality of the tomatoes you use will greatly impact the taste of your soup.
Look for ripe tomatoes with deep red color and a slightly sweet aroma.
Fresh tomatoes will provide a more vibrant and authentic tomato flavor.
 
2. Do not forget to roast the tomatoes: Before making the soup, consider roasting the tomatoes in the oven.
Roasting intensifies their natural sweetness and enhances the overall flavor of the soup.
Simply slice the tomatoes, drizzle them with olive oil, sprinkle with salt and pepper, and roast in a preheated oven until they are soft and slightly caramelized.
 
3. Always sauté onions and garlic for a solid flavor base: To build a solid flavor foundation, sauté onions and garlic before adding the tomatoes. This step will help you to  release their aromas and develop a rich base for your soup.
