Hearthy Meatless White Beans Stew Recipe

Ingredients
  

  • 2 cups dried white beans such as cannellini or navy beans
  • 1 piece onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 tbsp olive oil
  • 2 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon thyme dried
  • 4 cups vegetable broth (or water)
  • 2 teaspoon Salt and pepper this measurement may vary according to your preference.
  • Fresh parsley for garnish optional

Instructions
 

  • Rinse the dried white beans and soak them in water overnight.
    Drain and rinse the soaked beans.

  • In a large pot, heat the olive oil over medium heat.
    Add the chopped onions and sauté until they turn translucent and start to brown slightly.

  • Add the minced garlic, tomato paste, paprika, cumin, and dried thyme to the pot.

  • Stir well to combine the ingredients and cook for 2-3 minutes to enhance the flavors.
  • . Add the soaked and rinsed white beans to the pot.
    Stir them together with the onion mixture, coating the beans evenly.
     
  • Let the stew simmer for about 1 hour or until the beans are tender and cooked through.
    Stir occasionally and check if more liquid is needed during cooking.
    Add hot water as needed to keep the beans covered.
     
    4 cups vegetable broth (or water)
  • . Once the beans are cooked, season the stew with salt and pepper to taste.
    Simmer for an additional 10 minutes to allow the flavors to meld together.
    Fresh parsley for garnish, 2 teaspoon Salt and pepper
  • Serve the Turkish white bean stew recipe hot, garnished with fresh parsley or dried red pepper.
